Agave means admirable or noble. The Maguey, as the natives call this plant after the deity Mahayel grows on the warm hills of the Sierra Madre in Mexico and after 8 to 12 years of growing in the sun, produces a pineapple-like core, the piña (Spanish for pineapple) weighing 25 to 75 kg. The secret of the fruit is a juice that is unique on our earth: rich in natural fruit sugars and since the Aztecs who called the juice “honey water,” in use in food and in medicinal applications. The condensed juice is therefore an excellent alternative to sugar, added cold or used in cooking and baking.
The sweetening power of agave is due to fructose molecules, which provide 30% fewer calories for the same sweetening power as regular sugar. Agave also has a low Glycemic Index, making it healthier than ordinary sugar and – used in moderation – can even be included in a diet for people with type 2 diabetes, also because it is not refined, unlike other refined fructose syrups. Unlike some table-top sweeteners, agave syrup contains neither synthetic (aspartame, acesulfan K, cyclamate, saccharin, sucralose…) nor semi-synthetic sweeteners (maltitol, xylitol, lactitol, sorbitol…).
Unopened, the product has a shelf life of 2 years without problems. Once opened, agave syrup can be kept for months at ordinary room temperature.
